Ingredients
- 4 slices whole wheat or multigrain bread
- 2 tablespoons cream cheese (or hummus for a healthier option)
- 1 small cucumber, thinly sliced
- 1 small carrot, grated
- 2–3 lettuce leaves
- 2 slices of cheddar cheese (or any mild cheese kids like)
- A pinch of salt & pepper (optional)
Instructions
- Prepare the bread – Cut off the crusts (optional) to make it softer for kids.
- Spread the base – Apply cream cheese (or hummus) evenly on all slices.
- Layer the veggies – Place lettuce, cucumber slices, and grated carrot evenly on two slices of bread.
- Add cheese – Lay cheese slices over the veggies.
- Assemble – Top with the remaining bread slices, cream cheese side down.
- Cut into fun shapes – Use cookie cutters (stars, hearts, animals) or simply cut into small squares/triangles for bite-sized fun.
