Mini Veggie & Cheese Sandwich Bites

Ingredients

  • 4 slices whole wheat or multigrain bread
  • 2 tablespoons cream cheese (or hummus for a healthier option)
  • 1 small cucumber, thinly sliced
  • 1 small carrot, grated
  • 2–3 lettuce leaves
  • 2 slices of cheddar cheese (or any mild cheese kids like)
  • A pinch of salt & pepper (optional)

Instructions

  1. Prepare the bread – Cut off the crusts (optional) to make it softer for kids.
  2. Spread the base – Apply cream cheese (or hummus) evenly on all slices.
  3. Layer the veggies – Place lettuce, cucumber slices, and grated carrot evenly on two slices of bread.
  4. Add cheese – Lay cheese slices over the veggies.
  5. Assemble – Top with the remaining bread slices, cream cheese side down.
  6. Cut into fun shapes – Use cookie cutters (stars, hearts, animals) or simply cut into small squares/triangles for bite-sized fun.

Tips for Parents

  • Add a slice of turkey or boiled egg for extra protein.
  • Use colorful veggies like bell peppers for a more appealing look.
  • Serve with a small fruit bowl for a balanced snack.
